- Atlantic sturgeon can live longer than most other North American fish, sometimes reaching over 60 years of age.
- American sturgeon roe was so abundant in the nineteenth century that it was given away free in bars as a salty snack to make people drink more. Sturgeon and paddlefish are among the oldest surviving ray-finned fish lineages, largely unchanged for well over 100 million years. A leaping sturgeon of well over a metre is heavy enough to seriously injure boaters, which has led to actual public safety warnings on some rivers.
