The beluga sturgeon (Huso huso) can grow over 7 meters (23 feet) long, making it one of the largest freshwater fish in the world.
Sturgeons have existed since the time of dinosaurs, making them one of the oldest fish lineages. Some sturgeons can leap completely out of the water, a behavior still not fully understood. Their roe is processed into caviar, considered one of the world’s most luxurious delicacies.
